BreakfastHigh Protein
These are the pancakes I make on repeat — fluffy, naturally sweetened, and with enough protein to actually keep you full until lunch. They take ten minutes and one bowl.
Ingredients
- 1 scoop (30g) vanilla protein powder
- 1/2 cup (60g) oat flour (or blended oats)
- 1 ripe banana, mashed
- 2 eggs
- 1/2 tsp baking powder
- A pinch of salt
- Splash of milk of choice, if needed to loosen the batter
- Toppings: peanut butter, cacao nibs, berries, a drizzle of honey
Instructions
- Mash the banana in a bowl, then whisk in the eggs.
- Add the protein powder, oat flour, baking powder and salt. Whisk until smooth — add a splash of milk if the batter is too thick.
- Heat a non-stick pan over medium-low heat. Spoon in the batter (about 2–3 tablespoons per pancake) and cook 2–3 minutes until bubbles form on top.
- Flip gently and cook another 1–2 minutes until golden.
- Stack, top with peanut butter, cacao nibs and berries, and serve.
Macro tip: one batch makes roughly 4 pancakes with about 30g of protein total — a solid breakfast that fuels your morning without a sugar crash.
Why I love them
Protein powder can make pancakes gummy, so don't overmix and keep the heat low and patient. That's the whole secret. Make a double batch and reheat them through the week — they hold up beautifully.
