Crepes feel fancy but they're one of the easiest things you can make — and with a scoop of protein powder in the batter, they become a breakfast that actually works for your goals.
Ingredients
- 1 scoop (30g) vanilla protein powder
- 1/2 cup (60g) all-purpose or oat flour
- 2 eggs
- 3/4 cup (180ml) milk of choice
- 1/4 tsp salt
- Butter or coconut oil for the pan
- Fillings of choice: Greek yogurt, berries, dark chocolate, nut butter
Instructions
- Whisk the eggs and milk, then add the flour, protein powder and salt. Whisk until completely smooth — the batter should be thin, like heavy cream.
- Let the batter rest 10 minutes if you have time (it makes them more tender).
- Heat a lightly buttered non-stick pan over medium heat. Pour in a small ladle of batter and immediately swirl the pan so it coats the bottom in a thin layer.
- Cook about 45 seconds until the edges lift, then flip and cook 20 more seconds.
- Fill, fold, and finish with your toppings.
A note on protein powder
Keep the heat moderate — protein browns faster than flour alone, and nobody wants a burnt crepe. Low and steady gives you that perfect golden, pliable wrap every time.
These also store well: stack them with parchment between, refrigerate up to 3 days, and reheat in a dry pan.
