Hot Honey Beef Bowls

Ingredients

  • 1 medium sweet potato, diced (don't peel it)
  • Olive oil
  • 1/4 teaspoon of cinnamon
  • 1/4 teaspoon of paprika
  • 1/4 teaspoon of salt
  • 2/3 lb of ground beef (I cook 1 lb with leftovers)
  • 1-2 tablespoons of taco seasoning
  • 1/2 tablespoon of tomato paste
  • 1/2 cup of cottage cheese
  • 1 avocado, cubed
  • 3 tablespoons of hot honey (to taste)
  • Optional: roasted cauliflower florets, feta cheese crumbles, etc.

Instructions

  1. Toss the diced sweet potatoes in the oil and season with the salt, cinnamon, and paprika. Air fry, in a single layer, at 400°F for 8-12 minutes, or until golden and cooked through, shaking halfway.
  2. While the sweet potatoes are cooking, cook the ground beef in a large skillet over medium-high heat. Break up the ground beef and stir in the tomato paste. Sprinkle on the taco seasoning. Continue to cook, stirring occasionally, until browned and cooked through. Set aside.
  3. To assemble the bowls, divide the sweet potatoes and ground beef evenly between four bowls. Top each bowl with cottage cheese and avocados (and the roasted cauliflower and feta, if using). Sprinkle with a little more salt and drizzle generously with hot honey. Enjoy!
